Die Oudnoorse woord steikje, waarvan die woord “steak” ontleen, beteken “om te braai”. Van vroeg af in ons geskiedenis word daar reeds na braai verwys. In die bekende resepteboek “De volmaakte Hollandsche keuken-meid” wat in 1761 gepubliseer is, is een van die oudste braairesepte wat in Suid-Afrika gebruik is. In dié resep is vleis eers in gesmelte botter en pietersieliekrummels gedruk en dan in gebotterde papier tegevou voor dit op die rooster geplaas is. Die resep is gebruik vir enigeiets van haring tot skaap tong, maar is ook darm ingespan vir ’n alledaagse stukkie bees. Vir beste resultate het die resepteboek aanbeveel dat mens versigtig moet wees dat jou vuur nie doodgaan nie en dat die vleis dan met ’n sousie van aard bedien word. Wie sou kon raai dat daar bitter min sou verander in dié arena in meer as 260 jaar?


The Old Norse word steikje, from which the word “steak” derives, means “to grill”. Braai has been an integral part of our culinary history in South Africa. In the famous recipe book “De volmaakte Hollandsche keuken-meid” published in 1761, is one of the oldest braai recipes used in South Africa. According to this recipe, meat is first pressed in melted butter and parsley crumbs and then folded in buttered paper before it is placed on the grill. This recipe was used for anything from herring to sheep’s tongue, but was also used for a good old piece of beef. For best results, the recipe recommends that you be careful that your fire does not die and that the meat is served with a sauce. Who would have guessed that very little would change in this arena in more than 260 years?
